What most of the world knows as cinnamon is actually cassia. What we grow is Cinnamomum verum — true Ceylon cinnamon — with its signature multiple paper-thin layers, creamy tan color, and mild, complex sweetness with floral undertones. Our farmers peel the bark by hand during the wet season when it separates most cleanly, then roll and dry the quills into elegant sticks under Kerala's warm sun.
